This is a solid vegetarian cookbook, but I'm disappointed. I expected more from America's Test Kitchen. They do not define vegetarian or vegan for those new to vegetarian cooking. Many of the recipes are repeats from prior books, compiled now in one vegetarian volume. In the introduction they say that they will tell you when an easy substitution can be made to make the dish vegan, but I found those sections to be strangely absent when I actually got to the recipes. There is an excessive amount of information and substitutions listed for gluten free items, but none for dairy or egg issues. Sadly disappointing for a cookbook I was so excited to read. Mark Bittman's How to Cook Everything is far more complete than America's Test Kitchen's "Complete" Vegetarian Cookbook.
